Why Local and Seasonal?
When focusing on buying locally, the food that we want isn't always available in the midwest. Not everything grows here, either (think pineapples, avocados, oranges). The location and seasonal availability of fruits and vegetables is a concept our current lifestyle is unfamiliar with. We can go to the grocery store and get anything and everything, all the time. This means that produce is picked, packaged, and shipped all over the globe before it ever gets to our plates. Edible Alchemy looks to help educate and re-train our minds to think, eat, and enjoying the seasonal options here in Illinois. We provide produce boxes sourced from local farms, who grow food that can survive in the mid-western climate.
The farms that we buy produce from are closely connected with members of Edible Alchemy. Most of the farms we have worked for or formed close ties with through active communication. Everyone, even if not certified, uses sustainable processes that are good for the earth. They use organic products (such as Neem oil, pyrethrins, or diatemacious earth) as minimally as possible to control pests and weeds. Compost, natural fertilizers (manures, emulsions, rock powders), cover cropping, and companion plantings are used to enrich and maintain a high fertility of the soil.
Because the soil is fed and maintained, plants grow stronger and better.
